Soon people all over the world will be celebrating the holidays with a Christmas Eve or Christmas Day dinner. In Australia, where Christmas dinner is celebrated in the heat of the Summer Holiday for students, families gather indoors and out for barbeques and picnics in backyards, parks, and on beaches. Adults in Denmark enjoy their Christmas Eve dinners with hot glogg – hot wine brought to a boil with raisins, nuts, and spices. No matter where we are or where we’re from, Christmas dinner in Napa Valley is a time for family and friends to get together and share a delicious meal.

Bardessono in Napa Valley invites you, your friends, and family to share Christmas Eve or Christmas Day dinner with a special menu created by Bardessono Executive Chef Sean O’Toole. In keeping with Bardessono restaurant’s commitment to using fresh local ingredients, Chef O’Toole has created a multi-course menu incorporating ingredients from local farms.

For the first course, guests can choose between Maine Lobster Cappuccino or Hill Family Farm Sunchoke Soup. This is the first of many difficult choices from this exciting menu! The Maine Lobster Cappuccino, served with chestnut, candy cap mushrooms, and Meyer lemon, tastes like a classic lobster bisque and is topped with froth. The Sunchoke, with its delicate flavor similar to a cross between jicama and water chestnuts, combines deliciously with croutons and the aromatic black trumpet mushrooms.

Two salads will be served family style: Winter Salad of Hale Farm apples, avocado, candied walnuts, and black truffle vinaigrette; and Star Route Farm Beet Salad of pistachios, sylvetta (wild, organic arugula), burrata cheese made of Mozzarella and cream, and sherry vinegar.

The next course presents a difficult choice between four delicious entrees – especially if you enjoy steak, fish, and chicken, equally. A Marin Sun Farm Beef Roasted Rib Eye will be served with beef jus and one of my favorite things – carmelized shallots. The choices for fish include two different truffle sauces. A Truffled Lobster Sauce will accompany the Bodega Bay Halibut and a Spicy Truffle Vinaigrette will compliment an Atlantic Stripped Bass. If you prefer chicken, a Roasted Breast and Lemon Glazed Thigh of Clucky Plucky Chicken will also be served.

The final challenge, one that I’m sure anyone will be up for, will be deciding which scrumptious dessert to choose. There will be Desantis Farm lemon pudding, Satsuma Mandarin consumme citrus salad, and the traditional French Buche de Noel. One of the easiest, most enjoyable ways to sample Napa Valley wines from wineries in a single appellation is to make sure you don’t miss this year’s Rutherford Appellation Wineries Passport Weekend. On Saturday, December 4th and Sunday, December 5th, Passport ticket holders will be able to meet winemakers, experience barrel and tank tastings, food and wine pairings, entertainment, special discounts, and more.

Although the Rutherford appellation is most well-known for Cabernet Franc, Cabernet Sauvignon, Merlot, and Zinfandel; visitors will find more delicious varietals to taste. Proceeds from Passport Weekend will benefit a Napa Valley charity.

The outstanding Napa Valley Cabernet received 94 points from Wine Spectator. Hall Winery will be serving Cannellini bean soup with a tasty twist – pumpernickel croutons and sun chokes.

Mumm Napa Valley will also be offering Passport guests a specially made soup to pair with their award-winning sparkling wines. The chanterelle, hazelnut soup is certain to be perfect with Mumm Napa Valley 2001 DVX. Guests will also taste Mumm Reserve Brut. I love the delicious foods that accompany Thanksgiving. Last week, I wrote about some of the incredible options for a three-course dinner at Domaine Chandon’s Etoile Restaurant. This week, I’d like to share Silverado Resort and Spa’s Thanksgiving Buffet menu. Guests can choose between a late lunch at 1:30 p.m. or an early dinner at 4:30 p.m. The Grand Ballroom will be elegantly decorated with a buffet featuring all the decadent choices. Executive Chef, Jeffrey Jake, has created a menu that combines tradition with gourmet ingredients to create a special, sumptuous experience.

Chef Jake’s Wild Mushroom Stuffing includes Thyme, Sourdough, Cornbread, and rich, tender, flaky crumbs of Brioche. For sweet potato fans, there will be Roasted Sweet Potato Gratin with Maple Syrup and Toasted Pecans. Butter Whipped Potatoes will be prepared using ingredients from the organic Straus Family Creamery. Natural and organic honey from Marshall’s Farm will be skillfully applied to create a Honey Brined Petaluma Turkey Breast served with a Confit of Turkey Leg.

The Thanksgiving Buffet menu also includes entrees of Herb Roasted Prime Rib with Horseradish and Red Wine Sauce, and Lock Duarte Salmon served with Swiss Chard and a tangy, sweet Yuzu Vinaigrette.

Appetizing appetizers include an Artisan Cheese Platter, Maki Sushi, an Orecchiette Pasta Salad featuring Bellwether Farms Ricotta, and more.

Three salads will be prepared each with a different flavor. The Salad of Baby Red Beets will be made with the delicate, mildly flavored Mache gourmet salad green served with potato and horseradish vinaigrette. A sweet salad of Little Gem Lettuce with Asian Pear, Pomegranate, and Marcona Almonds will also be served. Inspired by past experiences where everything seemed joyous and effortless, I agreed to host Thanksgiving dinner last year. When the big day came I was tired and nervous. As my guests arrived I became lost in the fun of spending time with family and friends. By the end of the evening I was reminded that what was important was spending time with my favorite people. I spent the next couple of days washing dishes and enjoying leftovers. When the euphoria and tryptophan wore off, I was left thinking, “That was fun but I wish there was an easier way to do this.”

The Thanksgiving menu at Etoile begins with Oyster and Caviar service. The first course is a pairing of Roasted Chestnut Soup and Domaine Chandon Extra-Dry Riche. The Chandon Extra-Dry Riche won a Gold Medal and Best of Class at the 2004 California State Fair Wine Competition and was featured in Gourmet Magazine, also in 2004, as one of ten “Everyday Wine” recommendations.

Another course to look forward to is Braised Snake River Farms Pork served with Chandon Reserve Pinot Noir Brut. Snake River Farms is family-owned and is dedicated to providing the highest quality meats. The Chandon Reserve Pinot Noir Brut was described by Wine Enthusiast as rich, complex, and robust while receiving 93 points and the Editor’s Choice award in 2007.

One course that should especially peak your curiosity is Pan Roasted John Dory. I hadn’t heard of this deep-sea fish until I watched episodes of Chef Gordon Ramsay’s Hell’s Kitchen. John Dory is rarely imported to the United States and has been described as mildly-flavored, tender, and delicate. It will be accompanied by Domaine Chandon Carneros Chardonnay 2007.

Another course served with one of Domaine Chandon’s award-winning wines is Liberty Farms Duck Breast served with large, sweet Medjool Dates, Pumpkin Puree, and deliciously aromatic Black Trumpet Mushrooms. Perfectly paired with this course is Domaine Chandon Carneros Pinot Noir 2007. This wine was awarded 90 points by Wine Spectator this year.

A Thanksgiving celebration just isn’t the same without turkey. Etoile’s menu includes Roasted Diestel Farms Turkey Breast with Potato Puree, Pancetta Stuffing, and Cranberry. I was a young girl when I entered my grandmother’s bedroom without knocking. She was getting dressed and I noticed there was something missing from one side of her bra – it was empty. She gently chided me and told me to wait for her on the other side of the door. Confused, I searched for my mother, and received my first lesson in breast cancer. My grandmother is in her 80′s now, one of many of breast cancer survivors in the United States.

Since 1985 October has been recognized as National Breast Cancer Awareness Month. This year’s Pink Party on October 21, 2010 promises a celebration featuring pink Domaine Chandon champagne cocktails, pink appetizers created by Executive Chef Perry Hoffman of Domaine Chandon’s Etoile Restaurant, and plenty of dancing to the music presented by DJ Dukes. There will also be a Silent Auction offering Napa Valley wines and more.
