Those of us who have been to Etoile Restaurant at Domaine Chandon in Yountville in Napa Valley were excited but not surprised when Etoile was awarded a Michelin star. Etoile Chef Perry Hoffman may be one of the youngest chefs in the United States to receive a Michelin star (he is 26-years-old) but he has 22 years of experience.
A four-year-old Perry Hoffman happily assisted his grandmother, one of the original owners of French Laundry, in the restaurant’s kitchen. Ten years later he knew cooking was what he wanted to do full-time.

After the reception, dinner begins with succulent, often referred to as America’s finest fish, Pacific Pompano. The Pacific Pompano will be pan roasted and paired with Domaine Chandon Chardonnay, Carneros, 2007. The Wine Spectator awarded this still wine 91 points. The creamy texture of this Chardonnay makes it the perfect pairing for the Pacific Pompano.
The star of the second course is a Liberty Farms Duck Breast served with Smoked Eggplant, Glazed Black Mission Figs, and fresh Cannelli Beans. This course is lusciously paired with the rich in color and wonderfully flavorful Domaine Chandon Pinot Meunier, Carneros, 2008.
